This wine is truly a wonderful Napa Cab. In the glass, you're immediately greeted with aromas of violets, blackberry, and blueberry. Once you take a sip, this wine coats your palate with velvety, persistent tannins, paired with notes of pie spice, blueberry bramble, black pepper and a Bordeaux-like earthiness. Pair this Cab with a salty meal or one that is high in fat. Trust us, this is definitely a food wine. It's delicious alongside pasta Bolognese, sausage pizza, spare ribs (or any red meat), cheeses or a charcuterie board, as well as dark chocolate cake.
Ultraviolet Wines are an homage to the California climate where winemaker Samantha Sheehan grew up - it is a pure expression of fruit ripened under the California sun. Her Cabernet Sauvignon is velvety and balanced, made only with organically farmed grapes and a small amount of sulfur.
Samanthaʼs Cab Sauv is made up of 95% Cabernet Sauvignon and 5% Cabernet Franc. The Cabernet Sauvignon comes from three vineyards in the Red Hills AVA, which is just east of St. Helena, and west of Lake County. The vineyards are between 1500-2000 feet in elevation, with red volcanic soil and excellent drainage. Red Hills is one of the most geologically active areas in California, with a pocket of magma flowing two miles below. The Cabernet Franc comes from her personal vineyard plus a friends vineyard in Coombsville, which is the new AVA in Napa.

Vinification: Organic, sustainable, and natural practices. The grapes are hand harvested with the Cabernet Sauvignon from the Red Hills AVA and the Cabernet Franc from the Coombsville AVA. Fermented with native yeasts in stainless steel tanks at approximately 85 degrees Fahrenheit, then left on the skins for an additional 10 days post-fermentation. No additives, minimal SO2.
Aging: Aged 16 months 90% neutral French oak and 10% new French oak barrels.
