Tasting Notes

Hillaire’s Old Vine Cotes Du Rhone has classic bouquet of ripe red and black plums, cherries, ground pepper. The blend coats the palate in rich dark fruit, cherry paste, red licorice, and peppery spice with traces of the regions famed “garrigue”, or dried wild herb notes. Absolutely stunning with lamb dishes and hearty roast and stews. Also pairs well with BBQ and grilled meats.

Winery Details

Chataeauneuf-du-Pape takes its name from the papacy moving into the area in the 1300’s, “The Pope’s new castle”. A somewhat more recent arrival, Monsieur Olivier Hillaire, who owns a Brasserie & Boulangerie in town, purchased his plots in Chataeauneuf-du-Pape & Côtes-du-Rhône from a retiring Henri Boiron in 2006. Comprised of two vineyards, one near Bédarrides and the famed Vieux Télégraphe vineyards, the other near Pouzilhac, a great spot on the Lirac side of the river. When Oilvier Hillaire is not making wine he is baking at his restaurant in Chateauneuf-du-Pape!
