This is how Italian Sparkling Red, or better yet, Lambrusco should be. Fresh, dry, nice crisp sparkles dancing on your taste buds. Notes of Strawberry, cherry, rose petals, fig, earth, and wet stone. Really tasty! Just give this wine a nice chill, and you will be delighted. We highly recommend this wine as it will surely be the talk of the table.
Winery Details
Podere Sottoilnoce takes its name from the spontaneous walnut that rises in the middle of the old vineyard. The vineyards look southwest, towards the village of Castelvetro. We adopt biodynamic cultivation practices and embrace the philosophy of natural wines.

Vinification: Biodynamic and dry farmed. Grapes are hand-harvested in small boxes, destemmed, and vinified separately. They spend 5 days in cooled cement vats with 2 remontage per day. Grapes are then gently pressed and transferred to stainless vats where the Pied de Cuve in placed. The Pied de cuve is yeast starter produced from grapes and native yeast from the vineyard. Natural fermentation with indigenous yeasts. Unfined and unfiltered. No additives. Secondary fermentation occurs in bottle where the is done sur lie, hence the sediment in the bottle.
Aging: Aged in stainless, and aged in bottle.
